Have you ever just wanted something to eat, you crave it, you aren’t satisfied until you’ve gotten it? That was me last week, all I wanted was steak and carrots. Seriously, some days all you want is a nice juicy steak dinner. Yup, thats all I wanted for mothers day, so that’s exactly what the hubby made me! My husband is the grill master in our house. Before marrying him I use to grill on my cheapo grill. But when he moved he brought all the grill goodness (and equipment) with him. His grilled foods always come out better than mine ever did anyway, so I’m find letting him grill!

While this isn’t a very involved Tiny Kitchen Cooking recipe, like our Keto Garlic Ranch Pizza. It is certainly a delicious and quick meal to make. Never underestimate the power of a simple meal for your taste buds. We had steak, carrots, and potatoes, and the combo was perfect. No it wasn’t the most well balanced meal. Sure it was lacking in the greens area. But it hit the spot, we made it in a small area, and it was satisfying!

Steak Dinner – What You’ll Need

You’ll want to snag a steak of your preference; or sale price. We enjoy our meats but we enjoy them more when we get them for a good price. Good deals always taste the best am I right! You’ll also need a bag of baby carrots and a box of scalloped potatoes (or your favorite veggies, no judging). YES, we do usually make our own scalloped potatoes, when we choose to eat potatoes. But we haven’t been keeping potatoes in our house because they are a huge temptation for us on our low carb journey. But I digress, onto the Steak Dinner!

Steak Dinner – Prep

Unpackage your steak and season with your favorite seasonings. Seasoning is going to add an extra level of YUM to your steak dinner. We LOVE the Cavender’s All Purpose Greek Seasoning, we literally use it on everything! Set your steak aside and begin prepping your carrots. Now, this is a preference my husband has. When he preps baby carrots he cuts them in halves, this is not essential so it’s up to you. If you choose not to cut the carrots simply rinse them and place them in your vegetable steamer basket. Place steamer basket in your pot with water to the bottom of the basket.

Potatoes Prep

Next, spray your baking dish with cooking spray to prep for you potatoes. We use Chosen Foods Avocado oil cooking spray. We use avocado oil for pretty much everything because it’s a safer option of oils as well as it has a high smoke point; you use what you prefer. We also love pyrex dishes for everything, and YES they will be coming with us on the boat.

In a mixing bowl add 2 Tbsp of Butter, half cup of lactose free milk, and 2 cups hot water. Whisk mixture together until blended. Next you’ll add in the potatoes from your box. Again, we do normally make our potatoes from scratch but this works in a pinch! You’ll put your potatoes in the oven at 450 for 25*ish* minutes. When the potatoes go into the oven put your carrots on the stove over medium-high heat and cover.

It’s Almost Time To Grill

My husband went out, turned on his grill, added our 15″ cast-iron pan to the flames and tossed some butter in the pan to prep. Once the carrots and potatoes were almost done, and the grill was warm, he put the steaks into the buttered pan. He grilled the steaks on both sides for roughly two minutes. We like our steaks medium-rare so your cook time will vary depending on your level of doneness preferred.

While he waited for the steaks to finish he strained the carrots out of the steamer basket and added them to a pan with some butter and Cavender’s All Purpose Greek Seasoning. He sautéed them a bit for some additional flavor in between his steak flips. At this point the potatoes will be just about done as well so check them and pull them out if ready.

Dinner Is Served

That’s it, dinner is served! You’ve got steak, potatoes, and carrots and happy tummies! It took much longer to snap all these pictures and write this blog than it did to make and eat my mothers day dinner lol. So if you’re looking for a quick, yet delicious, meal I always say you can’t go wrong with a steak dinner!

Our Favorite Tiny Kitchen Items

Ingredients 

Steak (of your choice & quantity)
1 Bag of Baby Carrots
1 Box Idahoan Cheesy Scalloped Potatoes
4 Tbsp Kerrygold Butter
1/2 cup Lactose free milk (replace with regular milk if thats what you prefer)
2 Cups Hot water
Cavender’s All Purpose Greek Seasoning 

Instructions

1. Unpackage your steak and season with your favorite seasonings. We LOVE the Cavender’s All Purpose Greek Seasoning 
2. Prep your carrots by slicing them in halves. If you choose not to cut the carrots simply rinse them and place them in your vegetable steamer basket 
3. Place steamer basket in your pot with water to the bottom of the basket.
4. Pre-heat oven to 450
5. Spray your baking dish with cooking spray to prep for you potatoes.
6. In a mixing bowl add 2 Tbsp of Butter, half cup of lactose free milk, and 2 cups hot water. Whisk mixture together until blended.

7. Add potatoes to your newly whisked mixture and add to baking dish. Place baking dish into the oven.
8. Put your carrots on the stove over medium-high heat and cover
9. Once the sides are almost done turn on grill, add cast-iron pan, and a tbsp of butter to the pan. The grill will be as hot as possible so that the cast iron turns white hot.
10. Grill steaks roughly 2 minutes each side (this is for medium-rare, cook to your desired doneness)
11. Strain carrots out of the steamer basket and added them to a pan with some butter and Cavender’s All Purpose Greek Seasoning.
12. Pull potatoes from the oven, remove carrots from pan, and pull steak from the grill, tadaaaa steak dinner is served!
